Christmas Chicken Salad
I have no measurements really.  The first time I made this I used a smoked chicken and it took me hours.  I now buy a canned chicken, and always try to find a good, organic one.  One can of chicken (mush it up so it is very fine), one small honey crisp apple cut up really small, 1/2-3/4 cup peas and carrots thawed but not heated, and greek yogurt or light mayo (use just enough to moisture and let it all stick together). Add some garlic salt, onion salt, and pepper.  Mix it all together and put in fridge so it can stay cold.  Cook brown rice to package directions.  Add olive oil and cavendars seasoning to taste.  Serve chicken salad over warm rice.
